Tea is a beverage widely consumed throughout the world and it is characterized by its high content of polyphenols. The present method developed for the separation of polyphenols from green tea leaves uses no organic solvent and all the extraction is done using water as the solvent. Green tea is first infused with hot water and then the extract is centrifuged to remove the heavier particles. The solution is subjected to ultrafiltration and nanofiltration processes with membranes having suitable molecular weight cut off (MWCO) to concentrate tea polyphenols. The concentrate is then freeze dried to form polyphenols in powder form. The purity of the final product in terms of the EGCG content is found to be more than 60% which is of high commercial value.
