 A process for enzymatic polishing of rice has been developed with the following factors:
  • The microbial enzymes, which have been used for the polishing of rice, have never been used earlier by any researcher
  • Time requirement for the enzymatic treatment is very less
  • The degree of mechanical milling required is substantially less
  • Percentage loss in this process is negligible
  • The concept of using dual enzymes for enzymatic polishing is a totally new concept
